Recipe For Banana Almond Flakes Cream Cheese Cupcakes

Banana Almond Flakes Cream Cheese Cupcakes 

Banana ......! Yes! How would you like to have your homemade Banana Almond Flakes with Cream Cheese topping cupcakes? Not just normal cupcakes but spongy, not too sweet, melting cream cheese with just the right amount to smooth your tongue!! Banana is not just a fruit to fill your stomach and give you energy, it also contains other vitamins! ( Click to learn more about the vitamins in banana ) It's an easy recipe, no need pipping but just spread the topping will do! Here is the recipe :



Preparation Time :  30 mins
Baking Time : 20 mins
Makes : 12 to 16 cupcakes ( depend on the size of the cups)

Ingredients :
- 4 big ripe bananas ( break into pieces, then use fork to mash it till smaller pieces )
- 1/2 cup fine white sugar
- 2 eggs
- 3/4 cup corn oil (or vegetable cooking oil)
- 1 cup of buttermilk ( if you don't have, mix 1 tbsp of vinegar or lemon juice with 1 cup of milk, leave it for 2 minutes )
- 2 cups of all purpose flour, sifted
- 1 1/2 tsp of Bake King Baking Soda

Frosting : 
- 250g of Philadelphia Cream Cheese, or any other brand of  your choice of cream cheese
- 1 tsp vanilla essence 
- 1/2 cup icing sugar
- 6 heap tbsp of butter ( at room temperature )
- some almond flakes for topping ( you may choose to toast or brown it a little to make it crispy if you like )

( Note : the amount of frosting above is more than enough, the balance you can keep it in the fridge for up to 10 days or, if you don't intend to make it as cupcakes but a whole cake, it's sufficient! )

Preheat : 
- small toaster oven : preheat at 150'C, bake for 18mins
- conventional microwave oven : preheat at 130'C, bake for 20mins
- Philips Airfryer :  preheat at 180'C for 3 mins, bake for 18mins

Method :
- in a mixer bowl, add sugar, then add the eggs one at a time, lightly beat until smooth.
- mix all the ingredients one by one ( except for frosting ), then add the mashed banana.
- grease the cups with little butter.
- fill the cups half and bake in the preheated oven.

for frosting, in a clean mixer bowl, add butter and cream cheese, using an electric mixer beat till they are well mixed.
- add sugar and vanilla essence, beat till the batter is fluffy.
- after the cupcakes are baked from the oven, let them cool down in the room temperature, instead of pipping the frosting, use a bread spread knife to apply the frosting on top of the cupcakes, sprinkle with some almond flakes.
